Thought I'd try a different way to serve my favorite fish, cavala (that's Portuguese for mackerel, if you didn't already know).
Slice into mini steaks. Careful to measure each to the same thickness so they'll cook evenly. Rub in some Thai curry paste (or anything else that catches your funky) and splash on a bit of lemon juice.
Set aside the heads to make stock later. Makes great soup or a nice paella.
Five minutes a side on a medium heat in a lightly oiled saute pan. Splash in a good bit of lemon juice and soy sauce as you're cooking.
Serve up with some veg and a carbohydrate, in this case quinoa. Reduce down the lemon and soy sauce in the pan until it's thick and syrupy. Then drizzle over the mini steaks just before serving.
